(The Return of the Brewer)

I just came back from a week of holidays (and the first time on skis in 21 years) to a happily fermenting container of beer in the living room. A quick measurement shows it at a specific gravity of 1.012, so it will have to stay fermenting for another couple of days. I’ve racked it off the dead yeast though – and of course I had to do some quality control… Wow, those Polaris hops certainly keep their promise! Very bitter, but still pleasantly so, with the typical cascade flavours all there. I’m certainly looking forward to drinking this when it’s bottle-fermented and matured. Only about a month to go…
